Breakfast Fried Rice
I had a bunch of leftover rice from Chinese takeout this weekend and, well, wanted breakfast. So I made some breakfast fried rice that turned out rather nicely if I do say so myself. I've been meaning to start posting recipes every so often for a good bit now, but I never seem to get around to it. Maybe now that I've started, I'll do more. But then again, maybe not.



Breakfast Fried Rice

2 TBSP vegetable oil
3 TBSP butter
1/2 c sliced, slivered or chopped almonds
2-3 c cooked rice (leftovers from takeout work perfectly)
1/2 c shredded coconut
1/4 c brown sugar
1/2 c dried fruit (I used a bag of mixed dried berries and some dried cherries, but anything should work)
3 eggs
2 TBSP brown sugar

It should be noted that all measurements are approximate cause I never measure things when I'm cooking (unless I'm baking, but that's a different story.)

Heat up a wok (or frying pan) all nice and hot. Add the oil and butter. Add the nuts and cook about a minute until they get a bit golden. Add everything else except the eggs and second bit of brown sugar. Stir fry for a bit until it's nice and toasty. Mix together the eggs and remaining sugar. Push everything else to the edges of the pan so there's a blank bit in the middle. Pour the eggs into the blank bit and scramble. Some of the rice and such will fall into the eggs; that's fine. When the eggs are just a bit wet still, mix everything into the middle. That's it. Easy AND tasty!

I eat leftover rice for breakfast all the time. I usually use 1/4 cup of oatmeal to every cup of cooked rice...and heat it up in 1/2 cup of liquid. Usually soymilk. Then I add nuts, dried fruit and coconut flakes...and usually a little cardamom. It's what I made when we went camping...though at home I get a chance to cook it a little more until it's mushy. More of a hot cereal than a fried rice.

I DID make a sweet rice jook during sesshin and top it with stir-fried apples. Stir-fried apples rock...you should try it sometime. I add in walnuts and soaked raisins at the end. Mmmm...

Yeah. Same basic ingredients, different preparation. Although I didn't think to add any spices. I'll have to remember to do that next time.

YUM!!! How clever of you to work something out for me...I hate rice pudding but love rice. I never would have thought to do this in precisely this way. I'm glad you shared.

Thanks. It was totally a spur-of-the-moment thing, but I do think it turned out quite well. I'll definitely make it again.
